HUÎTRES ET MOULES

In the " Bassin de Thau " the main activities are ostreiculture (oyster-breeding) and mytiliculture (mussel-breeding). Oysters are attached to ropes or bars and immersed for a year. As for mussels, they are immersed in bunches when still " naissain " (babies). Either eaten raw or cooked, they will be delicious.
